Use Shony instead of salt to add a salty, umami flavour without the sodium. Contains Iodine, Calcium, Potassium and Magnesium along with Fibre, Iron and Protein.

Dulse is more robust and is mineral and protein rich adding umami savouriness. Sometimes known as "vegetarian bacon".

Kombu is a great source of vegetable protein and is great in soups, stews and sauces.
